Vegan Avocado and Basil Pasta

My boyfriend and I just love this super easy and quick to make avocado and basil pasta sauce. We usually pair it with cherry tomatoes, but we were out of those today, hence the normal tomatoes. 😀 Works just fine as well. All you really need for this recipe is ten minutes and a blender.

Ingredients (for two servings)

  • about a handful of basil leaves
  • 2 ripe avocados
  • salt and pepper
  • 1 tbsp of extra virgin olive oil
  • lemon juice
  • some cherry tomatoes


Cook the pasta as directed on the package.

While the pasta is cooking, blend together in a blender the avocadoes, basil, and olive oil. Add salt, pepper and lemon juice to your taste. Chop the tomatoes into bite-sized pieces.

When the pasta is done, quickly transfer it to a mixing bowl. Add the sauce and tomatoes to the still hot pasta and stir to combine. Serve immediately.
