Quick Cherry Chocolate Cake

Ever had a random craving for cake? That was me yesterday. So I found a recipe for chocolate cherry cake, adjusted the ingredients to what I had at home and it turned out perfectly. Moist and fluffy chocolatey goodness.

Doesn’t this make you crave cake?

Ingredients (for one standard baking tray)

  • 230g room temperature butter
  • 200g sugar
  • a few drops of pure vanilla extract
  • 4 eggs
  • a pinch of salt
  • 400g plain flour
  • 10g baking powder
  • 40g of melted milk chocolate (You can use any kind really, but I had milk-chocolate at hand and it worked perfectly.)
  • 3 tsp cocoa powder
  • 170 ml milk
  • one large jar of cherrys (about 400g drained net weight)


Preheat the oven to 180C/356F.

In a large mixing bowl, cream together the butter and the sugar. Once smooth, add the pure vanilla extract. Add the eggs individually, beating until each egg is fully incorporated into the dough before adding the next one.

Turn the mixer on low, and gradually add the milk. Melt the chocolate in the microwave and add it to the mixture as well.

In another bowl, sift together the flour, baking powder, cocoa and the salt. Add this gradually to the mixture.

Transfer the dough to a greased, lined baking sheet. Drain the cherrys and lightly coat them in flour, to prevent them from sinking into the dough. Distribute them relatively evenly on the cake.

Bake for about 35 minutes.
